Synopsis

Our conference follows the Flavour Raw Materials Exhibition where over 50 companies showcase their innovative flavour and taste ingredients and blends. The source, supply and production of flavour ingredients is an international enterprise worth over $15 billion. System approaches range from the traditional to novel and emerging technologies. The market pressures include the need for providing cost effective solutions that are ‘Natural’ and ethically sourced in a sustainable manner. Ingredients more frequently must meet the demands for ‘clean label’ end products. The modern flavourist needs to be agile to respond to rapid changes in legislation, health imperatives and fears over additives and the degree of processing of modern foods. These challenges have emerged with changes in consumer preferences. They are accompanied by the ongoing need for affordable nutritional diets that also meet the consumers’ demand for convenience and indulgence as part of a modern lifestyle. The food sector has responded by targeting nutrient dense, high protein, products for development. This comes with new opportunities for the flavourist to optimise flavour impact and flavour delivery profiles.

Panels will discuss with the audience the challenges facing flavourists and product developers at a time of great change and when warnings of impending food shortages are in the headlines. Threats to ingredient supply are emerging annually as agricultural primary production recoils from year-on-year extreme weather events, a consequence of climate change. Resource efficient sustainable manufacturing, off-flavour implications of valorising side streams, and looking to the future for the food system whilst learning from the past, all form part of this important debate. How is the flavour sector pivoting to meet these challenges? This question is being posed at a time when the value of processed foods in providing safe, nutritious, and affordable food sustainably is being questioned.

The Programme

Listen to international experts at the forefront of flavour innovation and sustainability discuss topics of key importance to the global flavour industry. Talks will focus on how a much maligned, although successful, food system will look in a future of novel ingredients, emerging global flavour trends, and climate change. Green chemistry, fermentation, extraction technology, and taste masking of plant-based products will all form part of the conference programme. There will be a tasting session of sustainable and alternative chocolate.
 
Along with Q&A sessions, panel sessions will address the current trends and opportunities. Audience participation in panel sessions is encouraged, and the networking opportunities allow delegates to meet speakers and explore future collaborations with leaders in the sector.

Synopsis
The food system is one of the most remarkable examples of human progress but is largely taken for granted. In fact, the modern food industry is more likely to be reviled than celebrated. Why is this the case? Why is it so easy to forget the extraordinary progress when it comes to tackling hunger, famine and malnutrition? What is it about food that so inclines people to reject modernity and return to an imagined glorious past? This talk will discuss how our food system has evolved, the remarkable positive impact it has had on humanity and what that can tell us about tackling the challenges of the future? How can we help consumers navigate the current food system in a sensible way? And how can we convince people that judicious use of science and technology is the best way to build a better food system?

Biography
Anthony Warner is a chef and author who has worked in professional kitchens for 25 years. As well as several years in high-end restaurants and hotels, he was the Head Innovation Chef at Premier Foods for over a decade, developing recipes for brands such as OXO, Bisto, Sharwoods, Branston, Loyd Grossman, Homepride and Ambrosia. He is now a consultant development chef specialising in the development of plant-based foods and the creation of healthier, more sustainable food products. He has written about food for New Scientist, The Sunday Times, The Telegraph, The Grocer and the infamous Angry Chef Blog. He is the author of the award-winning Angry Chef trilogy of books on food science, health and sustainability. His books have been translated into 14 languages, and he is a regular keynote speaker at conferences and events around the world. His writing has been described as ‘irreverent and intelligent’ by Steven Pinker and ‘brutal and meticulous’ by Olivia Potts.
